Construction began before 1157, according to the infobox. The Romanesque keep Platteltz is the oldest part, built on the site of an earlier manor hall. Greater Rodendorf House was started in 1470 and completed around 1520, Little Rodendorf House was finished in 1540, and the Rübenach wing was completed in 1472. The Kempenich house replaced the original hall in 1615.

Eltz is a Ganerbenburg, a castle shared by joint heirs, with three family branches each holding its own complex of buildings. About 100 family members lived in over 100 rooms. Eight towers of up to eight stories rise 98 to 131 feet (30 to 40 m). The castle stands at 1,050 feet (320 m) elevation on a rock spur about 230 feet (70 m) high.

Eltz is one of three Eifel castles that were never destroyed. The half-timbered facades were renovated from 2009 to 2012. The Rübenach and Rodendorf wings are open to the public from April to November.
