Dinefwr Castle sits on a ridge about 100 feet above the River Towy. Tradition credits Rhodri the Great with the first castle, but no archaeological remains have been dated from that period. Rhys ap Gruffydd is thought to have rebuilt it in the late 12th century. The earliest surviving parts are thought to date from the time of Rhys Gryg in the early 13th century. Sir Rhys ap Thomas carried out extensive rebuilding toward the end of the 15th century.
Edward I's forces captured it in 1277, and Owain Glyndŵr's forces besieged it unsuccessfully in 1403. Newton House was built nearby in 1660, and the keep was modified as a summer house. The keep burned down in the 18th century.
The Wildlife Trust owns the castle, and Cadw manages it on the trust's behalf. It is a Grade I listed building.
